Its a healthy snack that’s bursting with flavor. With Greek yogurt and fresh berries, this sweet treat is perfect for a healthy snack or dessert. Fun to make, delicious to eat, full of simple and healthy ingredients, and pretty too.

This recipe has a simple nutty base then a layer of yogurt, then the berries on top. Protein packed, no-bake, and perfect to stash in your freezer to grab whenever the craving for a special ‘something’ hits.

The beauty of this recipe is that you can add as much (or as little) sweetener as you like, use different nuts or seeds in the base or any fruit and berries that you like to make it in your way and taste.

Ingredients

Base Crust

  • 1/2 cup crushed almonds (or almond meal)
  • 1/2 cup desiccated coconut
  • 1/2 cup rolled oats
  • 1/2 cup coconut oil, melted
  • 1/4 cup honey or maple syrup

Vanilla Yogurt Layer

  • 2 cups strawberries and/or raspberries fresh, chopped
  • 2 cups Greek yogurt, plain
  • 1/3 cup mascarpone (or cream cheese)
  • 1/4 cup honey or maple syrup
  • 2 teaspoons vanilla extract

Instructions

Base Crust

  • Line a 12-cup muffin tin with silicone or parchment cupcake liners, or add directly to nonstick or silicon muffin pan.
    In a small bowl, stir together crushed almonds, coconut, oats, honey and coconut oil. Spoon a small amount into the bottom of each muffin cup. Just divide the mixture up between the 12 muffin cups.

Vanilla Yogurt Layer

  • In a medium bowl, mix together yogurt, mascarpone, honey and vanilla. Spoon 1-2 tablespoons into each muffin cup, covering the crust.
    Top with fresh chopped berries. Freeze until firm, about 4-6 hours. To serve, remove from muffin pan or pop out of muffin mold and allow to sit at room temperature for 8-10 minutes to soften before eating.
