A healthy treat that looks as fancy and indulgent as this gourmet dessert is just the look we were going for here! It is difficult to take any credit for it though. The beauty comes from the splendid colour of summertime berries.
Line a 12-cup muffin tin with silicone or parchment cupcake liners, or add directly to nonstick or silicon muffin pan.In a small bowl, stir together crushed almonds, coconut, oats, honey and coconut oil. Spoon a small amount into the bottom of each muffin cup. Just divide the mixture up between the 12 muffin cups.
Vanilla Yogurt Layer
In a medium bowl, mix together yogurt, mascarpone, honey and vanilla. Spoon 1-2 tablespoons into each muffin cup, covering the crust. Top with fresh chopped berries. Freeze until firm, about 4-6 hours. To serve, remove from muffin pan or pop out of muffin mold and allow to sit at room temperature for 8-10 minutes to soften before eating.
