Chocolate Coconut Butter Cookies
Ingredients
- 1 medium banana
- 1 cup dates, soaked 30 minutes and drained
- 1/2 cup almonds or walnuts
- 1/2 cup coconut butter, melted – store bought or homemade recipe below in notes
- 1/4 cup coconut (or almond) flour
- 1/4 cup cocoa powder
- 1 teaspoon vanilla extract
- 1/4 cup mini chocolate chips - optional
Topping
- Extra coconut butter for drizzling
Instructions
- In a food processor, process the almonds until broken down and crumbly. Add dates, banana, coconut butter, coconut flour, cocoa powder and vanilla extract and process until a thick dough like paste forms.If using chocolate chips, add them and pulse a couple of times to combine.Form the dough into 12-14 balls and flatten each one into a cookie shape. To serve, drizzle with extra melted coconut butter if desired.Store cookies in a covered container in the refrigerator for up to 4 days or in freezer for up to 3 months.
