Chocolate Coconut Butter Cookies

This easy no bake recipe for coconut butter cookies is a healthy yet decadent tasting treat!  Sweetened with bananas, dates, these cookies have creamy cookie dough texture and are great for an after school snack or anytime snack!

Ingredients

  • 1 medium banana
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup almonds or walnuts
  • 1/2 cup coconut butter, melted – store bought or homemade recipe below in notes
  • 1/4 cup coconut (or almond) flour
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips - optional

Topping

  • Extra coconut butter for drizzling

Instructions

  • In a food processor, process the almonds until broken down and crumbly. Add dates, banana, coconut butter, coconut flour, cocoa powder and vanilla extract and process until a thick dough like paste forms.
    If using chocolate chips, add them and pulse a couple of times to combine.
    Form the dough into 12-14 balls and flatten each one into a cookie shape. To serve, drizzle with extra melted coconut butter if desired.
    Store cookies in a covered container in the refrigerator for up to 4 days or in freezer for up to 3 months.
