Blue Spirulina Snack Balls

These naturally dyed blue healthy snack balls are perfect if you want something sweet and satisfying. Super easy to make, full of flavor, and way healthier than store-bought.
These little snack balls look and taste delicious, are full of healthy ingredients and will give you a boost of energy and satisfy sweet cravings in an instant.
They are also full of fibre, minerals and vitamins and these bite-size morsels are a good way of incorporating more good stuff into your diet.
Another benefit is that they only need 10 minutes prep time and can be easily prepared in advance – stored in an airtight container in the fridge they will stay fresh for two weeks. Whenever you need a quick energy boost, bliss balls are the ideal ‘grab and go‘ snack.
Now lets look at the blue colour.
Blue Spirulina powder has been added to give a pretty vibrant blue effect.
Blue Spirulina is the magic ingredient that makes any food look Instagramable (#trendy). This intense deep blue pigment is known as phycocyanin and is extracted from spirulina, a well-known antioxidant superfood.
It is freeze dried to preserve its natural colour and nutrients. You can get creative and add this beautiful nature product  to literally anything for a heavenly nutritional boost and some epic blue instaworthy pictures!
You can add blue spirulina to water, juices, smoothies, breakfast food, baked food, sweets, yoghurts, cereals or any other foods.
For light blue shades, use just a pinch and for a more brilliant blue, use up to the full teaspoon.
To explain what Blue Spirulina is:
Blue Spirulina (Phycocyanin) is a blue pigment derived from blue-green algae.
It's rich in protein, vitamins, minerals, iron, carotenoids and antioxidants that may help protect cells from damage.
Its known to have high nutritional value and boost the immune system, increase metabolism and improve digestion! Contains an abundance of B vitamins which can enhance energy levels.
Who knew algae could be so wonderful?
The little bite sized treats pack and travel well and because they taste amazing - natural sugars from coconut and honey will satisfy any sweet tooth - kids love them too.
Pack them in the school lunchbox to help sustain kids' energy levels. Freeze them for longer storage and enjoy them straight from the freezer for a cool treat or enjoy as a healthy snack or post-workout treat.

Ingredients

  • 1 cup condensed milk, store bought or sugar free recipe below in notes
  • 2 cups desiccated coconut - plus extra for coating
  • 1/4 cup peanut (or any other nut or seed) butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon blue spirulina powder

Instructions

  • First if you are making your own sugar free condensed milk, do that first (recipe below in notes).
    Pour your desiccated coconut, condensed milk, peanut butter, honey and spirulina powder into a bowl and mix with well until it forms a thick mixture.
    Form balls using 1-2 tablespoons of the mixture. You can make them any size you want, but I recommend making them no more than 2-3bites each.
    Roll the balls in coconut and place on a lined baking sheet and leave in the fridge to solidify for 15-30 minutes.
    You can also freeze them for 5-10 minutes if you are in a hurry.
    Storage:
    At room temperature: Put the coconut balls in an air-tight container and leave them in a dry, cool place. Here, they will keep for up to 5 days.
    In the fridge: Transfer to an air-tight container and leave in the fridge. They will keep for up to 2 weeks in here.
    In the freezer: Once cooled completely, put them in a freezer-safe container or bags and store. They will keep for up to three months.
