Strawberry Frozen Yogurt Bites

Ingredients

Base Crust

  • 1/2 cup almonds or pecans or a mix
  • 1/2 cup oats, instant or quick
  • 1/2 cup desiccated coconut
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon peanut (or any nut) butter
  • 1 teaspoon vanilla extract

Strawberry Filling

  • 1 cup yogurt of choice
  • 1 cup fresh strawberries, hulled and diced

Garnish

  • fresh strawberries or shredded coconut

Instructions

Base Crust

  • Line a 12-cup muffin pan with muffin liners or use a12-cup silicone baking pan.
    Place almonds and coconut into a food processer and process until broken down and crumbly. Add oats, coconut oil, honey, peanut butter and vanilla and continue to process until mixture is sticky and well combined.
    Be careful not to over process as its nice to have texture and different sized “bits” in your strawberry bites base.
    Add 1 tablespoon of the base crust mixture into each muffin cup in the tin.

Strawberry Filling

  • Place strawberries and yogurt in a blender. Blend until it is a smoothie-like consistency.
    Spoon 2 tablespoons of the strawberry yogurt mixture into each cup, making sure to create an even layer. Tap the pan to smooth out each layer.
    Top with a strawberry slice or coconut shreds.
    Place the full muffin tin in the freezer and let freeze for 30 to 60 minutes.
    Remove the tin from the freezer. Let the bites defrost for a couple minutes. Use a knife or spoon around the edges of each bite to loosen them, and then pop them out of the tin to serve.
