This single serve no-bake chocolate peanut butter protein bar is packed with protein, healthy fats, and rich chocolate flavor. They make the perfect grab-and-go snack or post-workout treat! And this recipe is just for you….no need to share!

Why should you eat protein bars? Protein bars are simple, nutritious, ready-to-eat snacks. They need just six ingredients to make the bar and if you wish to top it with melted chocolate and chopped peanuts it would need another 3 ingredients.

But the big thing is….this homemade recipe will be so much better tasting and better for you than anything store bought.

I spent years eating protein bars, some of them were nice and some downright nasty. Got sick and tired of forking out tons of money for them. But not anymore. I opted to make my own and feel SO much better about it… and my wallet is thanking me too! I love packing them in my bag for a quick and healthy snack between meals.

This simple recipe for just one bar is the perfect combination of healthy and delicious, making them a snack that you can enjoy anywhere, anytime and without any guilt. Sweetened with honey, chocolate protein powder and lightly coated in chocolate  the bar is well textured and full of flavour.

Ingredients

  • 2 tablespoons almond or oat flour (oats blended to a flour)
  • 1 scoop protein or collagen peptides powder, chocolate
  • 1 tablespoon peanut butter
  • 3-4 teaspoons any milk or water, to reach desired consistency
  • 1 tablespoon honey or maple syrup
  • 1/4 teaspoon vanilla extract

Chocolate Topping

  • 1 tablespoon chocolate chips
  • 1 teaspoon coconut oil
  • 1 tablespoon skinless peanuts, roughly chopped

Instructions

  • Mix together honey, peanut butter and vanilla in a small bowl.
    Add in almond flour, protein and mix well to combine.
    Add 3 teaspoons of milk or water to form a pliable dough. You don’t want it to be sticky but soft and it should hold together well. Add a touch more water if necessary. If you have added too much liquid add 1 teaspoon more of protein powder at a time to dry the mixture out.
    Mold bar into a bar shape using your hands. Place on a piece of baking paper on a plate.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Drizzle with melted chocolate and sprinkle with peanuts.
    Place in the fridge to firm up for half an hour.
    Can be made in advance and will keep in the fridge in a seal tight container for 3-4 days.
    If you are planning on bringing it out of the house with you, store in the freezer to give it a little more staying power at room temperature!
