Ingredients
2tablespoonsalmond or oat flour (oats blended to a flour)
1scoopprotein or collagen peptides powder, chocolate
1tablespoonpeanut butter
3-4teaspoonsany milk or water, to reach desired consistency
1tablespoonhoney or maple syrup
1/4teaspoonvanilla extract
Chocolate Topping
1tablespoonchocolate chips
1teaspooncoconut oil
1tablespoonskinless peanuts, roughly chopped
Instructions
Mix together honey, peanut butter and vanilla in a small bowl.Add in almond flour, protein and mix well to combine.Add 3 teaspoons of milk or water to form a pliable dough. You don’t want it to be sticky but soft and it should hold together well. Add a touch more water if necessary. If you have added too much liquid add 1 teaspoon more of protein powder at a time to dry the mixture out.Mold bar into a bar shape using your hands. Place on a piece of baking paper on a plate.
Chocolate Topping
Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Drizzle with melted chocolate and sprinkle with peanuts. Place in the fridge to firm up for half an hour.Can be made in advance and will keep in the fridge in a seal tight container for 3-4 days. If you are planning on bringing it out of the house with you, store in the freezer to give it a little more staying power at room temperature!
