You remember those deliciously sweet and soft vanilla ice cream sandwiches from childhood, right? Lately, I’ve found myself longing for that nostalgic taste but with a healthier twist. This inspired me to create this Peanut Butter Yogurt Sandwich Cookies recipe.

Making an ice cream sandwich isn’t hard: It’s basically two cookies with some ice cream pressed in between. But flavor matters = my recipe makes the healthy delicious cookies from scratch to get the taste and texture just right.

My memory isn’t what it used to be, but this tastes and feels like what I remember from childhood (when this was one of my favorite things). Let’s reimagine our beloved traditional ice cream sandwich, but with a “macro-friendly” spin. We will swap out the high-sugar ice cream with a deliciously creamy blend of peanut butter flavoured thick yogurt, protein powder, a dash of vanilla extract, and just a smidge of honey (no added sugar).

We will hold it all together not with sugary cookies, but with oat flour, no bake cookies. The result? A masterpiece of flavor and nutrition! So, it’s all the fun and flavor of a classic ice cream sandwich but lightened up and loaded with goodness. And the best part? No ice cream maker needed for the best ice cream sandwiches ever.

These classic hot-weather treats remind me of drinking from the hose, piles of bikes discarded in front yards, sitting on the front porch, and licking the sticky, sweet chocolate cake from my fingertips, while creamy vanilla ice cream melts down my wrist. Ingredients

Cookie Base

  • 1 1/4 cups oat flour (oats blended to a flour)
  • 1/2 cup peanut (or any other nut or seed) butter
  • 1/3 cup thick Greek-style yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Protein Filling

  • 1/4 cup thick Greek-style yogurt
  • 1/4 cup protein or collagen peptides powder
  • 2 tablespoons peanut butter
  • 1 tablespoon honey or maple syrup

Peanut Butter Drizzle

  • 2 tablespoons peanut butter
  • 2 tablespoons any milk
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract

Instructions

Cookie Base

  • In a medium bowl, add oat flour, peanut butter, yogurt, honey and vanilla extract and mix together to form a soft dough. If the mixture seems a little dry, add a teaspoon of milk or yogurt at a time until it comes together. If it's too wet, add a tablespoon of oat flour.
    Roll into 10-12 1-inch small balls, and place on a parchment-lined plate or baking sheet. Flatten each ball slightly with a fork to create a cookie shape.
    Refrigerate for at least 30 minutes to allow the cookies to firm up.

Protein Filling

  • Mix filling ingredients until creamy. Place in fridge to firm up.
    Once firm, pair up cookies and sandwich them together with a spoonful of the filling between the two cookies to create sandwiches.
    Chill again until set.  

Peanut Butter Drizzle

  • Warm together all ingredients in 10 second bursts in a microwave or in a small dish over some boiling water.
    Drizzle over the cookies using a spoon or place into a small zip lock bag, cut off a corner and pipe it over the cookies for a decadent touch.
