Cookie Base
1 1/4cupsoat flour (oats blended to a flour)
1/2cuppeanut (or any other nut or seed) butter
1/3cupthick Greek-style yogurt
2tablespoonshoney or maple syrup
1teaspoonvanilla extract
Protein Filling
1/4cupthick Greek-style yogurt
1/4cupprotein or collagen peptides powder
2tablespoonspeanut butter
1tablespoonhoney or maple syrup
Peanut Butter Drizzle
2tablespoonspeanut butter
2tablespoonsany milk
1tablespoonhoney or maple syrup
1/2teaspoonvanilla extract
Instructions
Cookie Base
In a medium bowl, add oat flour, peanut butter, yogurt, honey and vanilla extract and mix together to form a soft dough. If the mixture seems a little dry, add a teaspoon of milk or yogurt at a time until it comes together. If it's too wet, add a tablespoon of oat flour.Roll into 10-12 1-inch small balls, and place on a parchment-lined plate or baking sheet. Flatten each ball slightly with a fork to create a cookie shape.Refrigerate for at least 30 minutes to allow the cookies to firm up.
Protein Filling
Mix filling ingredients until creamy. Place in fridge to firm up.Once firm, pair up cookies and sandwich them together with a spoonful of the filling between the two cookies to create sandwiches.Chill again until set.
Peanut Butter Drizzle
Warm together all ingredients in 10 second bursts in a microwave or in a small dish over some boiling water. Drizzle over the cookies using a spoon or place into a small zip lock bag, cut off a corner and pipe it over the cookies for a decadent touch.
