Peanut Butter Yogurt Protein Sandwich Cookies

These Peanut Butter Yogurt Sandwich Cookies might sound too good to be true but believe me, they are the real deal. With ingredients like yogurt, oat flour, peanut butter,honey and a touch of vanilla extract you are in for a real treat.

Ingredients

Cookie Base

  • 1 1/4 cups oat flour (oats blended to a flour)
  • 1/2 cup peanut (or any other nut or seed) butter
  • 1/3 cup thick Greek-style yogurt
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Protein Filling

  • 1/4 cup thick Greek-style yogurt
  • 1/4 cup protein or collagen peptides powder
  • 2 tablespoons peanut butter
  • 1 tablespoon honey or maple syrup

Peanut Butter Drizzle

  • 2 tablespoons peanut butter
  • 2 tablespoons any milk
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract

Instructions

Cookie Base

  • In a medium bowl, add oat flour, peanut butter, yogurt, honey and vanilla extract and mix together to form a soft dough. If the mixture seems a little dry, add a teaspoon of milk or yogurt at a time until it comes together. If it's too wet, add a tablespoon of oat flour.
    Roll into 10-12 1-inch small balls, and place on a parchment-lined plate or baking sheet. Flatten each ball slightly with a fork to create a cookie shape.
    Refrigerate for at least 30 minutes to allow the cookies to firm up.

Protein Filling

  • Mix filling ingredients until creamy. Place in fridge to firm up.
    Once firm, pair up cookies and sandwich them together with a spoonful of the filling between the two cookies to create sandwiches.
    Chill again until set.  

Peanut Butter Drizzle

  • Warm together all ingredients in 10 second bursts in a microwave or in a small dish over some boiling water.
    Drizzle over the cookies using a spoon or place into a small zip lock bag, cut off a corner and pipe it over the cookies for a decadent touch.
