Mango Pineapple Coconut Protein Whip

If there is one treat that screams summer, it would be something frozen – ice cream, frozen yogurt, sorbet…….but what about whip? What exactly is whip?

Well, it is similar to ice cream, except that it isn’t churned to incorporate air. It isn’t frozen yogurt, because well, it doesn’t contain much yogurt. And it certainly isn’t sorbet since it does contain cream. It’s whip. Fruit, yogurt and coconut cream, whipped in a food processor or blender, something that doesn’t churn air into the final product. So, to celebrate me dreaming this concept up, I whipped up a batch of Mango Pineapple Coconut Protein Whip. And it was so easy. And….so darn delicious.

If you have visited any of the Disney Parks, you will know how delicious their Dole Whip recipes are. It is similar to soft-serve ice cream but its made with  mango and pineapple chunks and coconut milk flavors!

This whip recipe is made with simple ingredients and will bring you back to the Magic Kingdom on those hot summer days to cool you and your family down. Protein Whip is a light, airy, and creamy dessert made by whipping frozen mango and pineapple, Greek yogurt, coconut cream and honey together. This creates a texture similar to a mix between whipped cream and mousse, with the added tang of yogurt. So incredibly delish!

It tastes like a fluffy yogurt cheesecake mousse.  It pairs so well with fresh berries or even some dark chocolate shavings on top.  I’ve used this as a fruit dip, as a cake topping, and simply a dessert on its own to serve with fresh or freeze-dried fruit, nuts, seeds or shredded coconut!

It can also be used as a healthier, protein-packed alternative to traditional whipped cream. The whipping makes it taste even better with twice the volume. It’s virtually the same concept as what happens when you make whipped cream. As the mixture is whipped, tiny pockets of air form to give it a lighter, airy texture.

Why it works…

True Greek yogurt is strained, making a thick, low-moisture foundation for this dessert. The coconut cream thickens the yogurt. Ingredients like honey, lemon and vanilla extract add both flavor and sweetness to the dessert.

Protein powder allows the macro nutrients (protein, carbs, fats) to become more balanced as part of a modern healthy eating plan (rather than the ancient high carb, low protein recipes) of yesterday.

Protein powder also acts as a “flour” to a recipe, giving structure and helping other ingredients stick together and hold their shape.

What can you do with Mango Pineapple Coconut Protein Whip?

Uhm, ANYTHING. My favorite options include dipping homemade seed crackers or toast into it, or eating it in parfait form with berries and granola. Or I have even been guilty of standing in front of the fridge at 2 am with a spoon. Oh yes, my hand is up in the air on that one!

It works as a dessert just as well as a breakfast. Along with a handful of toasted nuts for a bit of crunch. It’s also a solid alternative to ice cream or frozen yogurt, and, buried under crispy granola, it makes a pretty decadent brunch.

Also you can use it to top smoothies, smoothie bowls, pancakes, overnight oats or chia puddings. It’s basically homemade Cool Whip. But made with fruit, coconut cream and Greek yogurt!!

Easy. Healthy. Mango Pineapple Coconut Protein Whip can be made in 5 minutes and will truly satisfy your ice cream cravings! It is smooth, creamy and absolutely delicious! This is one recipe that I don’t mind making over and over again.

Mango Pineapple Coconut Protein Whip

Creamy, dreamy and definitely the most delicious form of soft ice cream I’ve ever had! You absolutely must discover whipped mango pineapple cream. Its my newest favorite no-bake dessert to enjoy now or make-ahead.

Ingredients

  • 1 cup mango chunks, frozen
  • 1 cup pineapple chunks, frozen
  • 1/2 cup thick Greek-style yogurt
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 2 tablespoons honey or maple syrup
  • 1/4 cup protein or collagen peptides powder
  • 1 teaspoon vanilla extract

Instructions

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making this whip recipe to allow coconut cream to separate.
    Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    Combine the frozen mango, frozen pineapple, yogurt, hardened coconut cream, honey, protein powder and vanilla extract in a food processor and process for up to 5 minutes, until the mixture is smooth, fluffy and creamy.
    Divide whip into four serving dishes and serve immediately.
    Top with fresh fruit or your chosen toppings.
