Mango Pineapple Coconut Protein Whip

Creamy, dreamy and definitely the most delicious form of soft ice cream I’ve ever had! You absolutely must discover whipped mango pineapple cream. Its my newest favorite no-bake dessert to enjoy now or make-ahead.

Ingredients

  • 1 cup mango chunks, frozen
  • 1 cup pineapple chunks, frozen
  • 1/2 cup thick Greek-style yogurt
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 2 tablespoons honey or maple syrup
  • 1/4 cup protein or collagen peptides powder
  • 1 teaspoon vanilla extract

Instructions

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making this whip recipe to allow coconut cream to separate.
    Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    Combine the frozen mango, frozen pineapple, yogurt, hardened coconut cream, honey, protein powder and vanilla extract in a food processor and process for up to 5 minutes, until the mixture is smooth, fluffy and creamy.
    Divide whip into four serving dishes and serve immediately.
    Top with fresh fruit or your chosen toppings.
