The secret ingredient = cottage cheese! Cottage cheese can really do everything you guys. No one will believe you when you tell them that these are healthy let me tell you! They are so quick to make and require very basic, minimal ingredients.

Perfect for any party or gathering, they taste just like a key lime pie, tangy, and bursting with fresh lime flavor, layered over a crunchy crushed granola crust. A fun, individual dessert that’s easy to prep and perfect to eat.

For this one, I made it feel a little more elevated with a swirl of homemade whipped coconut cream on top and adjusted the filling to lean a bit more into that protein-rich, tangy vibe by upping the cottage cheese to yogurt ratio.

As well as the nutritional benefits, digging into this healthy pudding also feels like you are eating a decadent dessert! Healthy eating is so much easier when what you are eating actually tastes good, isn’t it?

When I saw these lime cheesecake jars recipe made of cottage cheese I knew I had to try it. I mean, come on! I have to admit – I was completely sceptical of the viral cottage cheese ‘for everything’ trend. As a fitness professional, I have seen SO many “healthy” food trends come and go, and honestly, a lot just kind of fall flat.

But I decided to give it a try with this cottage cheese recipe and holy moly – I was so impressed! The cottage cheese gives the dish such creaminess, and gives a subtle cheesecake flavor, too. Plus it adds a good dollop of protein!

It is amazing! Literally amazing. This weird cottage cheese concoction is actually not weird at all. I can tell you for certain that this high protein treat is better than any of those healthy protein or energy bars, shakes or puddings you can find at the grocery store. With a deliciously rich flavor, creamy consistency, and thick texture … this homemade dessert looks, feels, and tastes like the real deal. I promise you … it is SO GOOD! And no … you can’t taste the cottage cheese one bit.

Its just as it sounds, cottage cheese that’s been blended or whipped to a light, fluffy consistency – similar to yogurt. It has a delightful mouthfeel, with a perfect blend of creamy, tangy, and a little salty.  Because cottage cheese is relatively low in carbohydrates, many who are on the keto diet or another low-carb eating plan are including it in their diets.

Cottage cheese is really good for you. Not only is it full of protein and packed with nutrients, but it is low in calories. About 80% of the protein in cottage cheese is casein, which is slowly absorbed by your body, and is ideally consumed before sleep for muscle synthesis. That makes cottage cheese the ideal evening snack with 25 grams of protein, healthy fats and fibre as well as added vitamins and antioxidants, depending on what fruits and nuts you use as toppings.

To harness the true power of cottage cheese, you need to whip it. This goes especially for people – who believe they don’t like cottage cheese and I think the issue is related to texture. But when you give cottage cheese a trip through the food processor or blender, the textural conundrum goes away. All you are left with is a creamy, airy mousse like treat.

Homemade Whipped cream– I whipped up some homemade coconut cream to finish these off. You can use store-bought if you are short on time, but homemade takes it to another level and only takes a few minutes. Homemade recipe below in notes.

Well worth making. I keep a can of coconut cream in my fridge at all times so I can quickly make whipped cream and dollop it on everything from smoothies and smoothie bowls to desserts like ice cream and fresh fruit.

Coconut cream comes in a can and is a thicker and richer product than coconut milk. Primarily used for adding a creamy, rich flavor and texture to both savory and sweet dishes, as well as being a dairy-free substitute for heavy cream. Its to die for GOOD! Once you have experienced whipped coconut cream you will never want dairy whipped cream again!

Ingredients

Base Crust

  • 1 cup granola

Creamy Lime Filling

  • 1 1/2 cups cottage cheese
  • 1/2 cup Greek-style yogurt, plain or vanilla
  • 2 tablespoons honey or maple syrup
  • 2 limes, juice and zest
  • 1 teaspoon vanilla extract

Topping

  • Dollop of whipped coconut cream – store bought or recipe below in notes
  • Lime zest

Instructions

Base Crust

  • Add granola to a food processor and pulse a few times to roughly break it up.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your cheesecake base.

Creamy Lime Filling

  • In a food processor add all filling ingredients and process for 12-15 seconds. Or until smooth and creamy.  Once again be careful not to over process or you will end up with a watery texture.  

To Assemble

  • Place crushed granola in the bottom of each of the 2 jars. Top with the lime cheesecake mix.
    Top with a dollop of whipped coconut cream – recipe below in notes.
    Garnish with lime zest.
    Note: Customize your base crust. Crushed granola is my go-to, but graham crackers, cookies, or even crushed nuts would all work here depending on your vibe.
