Lime Cheesecake Jars: High-Protein & No-Bake

These lime cheesecake jars are sure to be one of the simplest low carb dessert recipes that you will ever make. With minimal ingredients and just a few minutes of your time, you will be enjoying a rich and delicious sugar free lime pie in no time flat.

Ingredients

Base Crust

  • 1 cup granola

Creamy Lime Filling

  • 1 1/2 cups cottage cheese
  • 1/2 cup Greek-style yogurt, plain or vanilla
  • 2 tablespoons honey or maple syrup
  • 2 limes, juice and zest
  • 1 teaspoon vanilla extract

Topping

  • Dollop of whipped coconut cream – store bought or recipe below in notes
  • Lime zest

Instructions

Base Crust

  • Add granola to a food processor and pulse a few times to roughly break it up.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your cheesecake base.

Creamy Lime Filling

  • In a food processor add all filling ingredients and process for 12-15 seconds. Or until smooth and creamy.  Once again be careful not to over process or you will end up with a watery texture.  

To Assemble

  • Place crushed granola in the bottom of each of the 2 jars. Top with the lime cheesecake mix.
    Top with a dollop of whipped coconut cream – recipe below in notes.
    Garnish with lime zest.
    Note: Customize your base crust. Crushed granola is my go-to, but graham crackers, cookies, or even crushed nuts would all work here depending on your vibe.
