A creamy cashew fudge that is healthier than traditional fudge. This fudge only needs 5 ingredients and is an easy to make snack or dessert and unlike other fudge recipes, this one isn’t made with butter, condensed milk, frosting, peanut butter or loads of refined sugar.
While my lime fudge is still creamy and soft, it has on the other side nutrient-dense ingredients. Instead, it is made with cashews, coconut, dates and coconut oil.

Lime Cashew Fudge
Ingredients
- 2 cups cashews, soaked 3+hours and drained
- 1 cup desiccated coconut
- 1/4 cup coconut oil, melted
- 1/4 cup honey or maple syrup
- 2-3 limes, juice and zest, depending on how lime-y you prefer
- Few drops natural green food colour or make your own – cook tender, greens (such as spinach) in a tiny bit of water for about a minute. A few drops of the juice will give a very concentrated green.
Instructions
- Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Place all ingredients in a food processor and process until you reach a sticky dough consistency.Spread the mixture into the lined pan and spread out evenly.Put into the freezer for at least 3-4 hours or overnight.Using a sharp knife, cut into small squares and store them back in the freezer in an airtight container for 10 days or more. Take them out when you need something sweet (if too hard, let it warm up few minutes at room temperature).
