Lemon Poppy Seed Ice Cream? Really?
Poppy seed nice cream isn’t so weird when you consider that poppy seeds are used frequently in Central Europe, from cakes and strudels to special Christmas buns and pasta. It is often used as a ground paste.
Poppy seeds have been used for medicinal and culinary purposes around the world for thousands of years. They are popularly accompanied by lemon in baked goods, a nostalgic combination that has become a cult favorite around the world.
These tiny seeds come from the inner pod of the vibrant poppy flower and boast incredible nutritional benefits. They are good sources of protein and dietary fiber, as well as some essential vitamins and minerals such as omega-6 fatty acids, calcium, manganese, thiamine and folate.
Just 1 tablespoon has 13% of the RDA (Recommended Daily Allowance) of calcium! They also have a decent amount of magnesium (the mineral in the spotlight that everyone is low on), phosphorus, zinc, and copper.
This recipe is the best ice cream you will ever make at home but don’t let its loveliness fool you. The lemon packs a lot of punch and the poppy seeds provide a fun little crackle with each bite.
I may (?) have served this lemon poppy seed nice cream for breakfast, it’s that good for you. It is so delicious and easy to make. Light creamy texture, using real lemon for that fresh zesty flavor.
This luscious recipe is a wonderful healthy ice cream alternative. And it takes just minutes to whip up this easy healthy dessert in a food processor if you freeze the fruit ahead.
If you haven’t already heard about it, I would like to introduce you to ‘nice cream’, a yummy ice cream made with a frozen fruit base and other add-ins! Its my favorite healthy ice cream because it’s quick and easy to prepare, with only three ingredients required.
You simply blitz pieces of frozen fruit in a food processor and the end result is a whole-food ice cream that is rich, creamy, and luscious enough for a special occasion (birthday party, anyone?) yet light and easy enough for an any time indulgence.
You don’t need one of those special ice cream churning machines, you simply use frozen banana, a splash of milk and some flavourings – that’s it!
It sounds too good to be true doesn’t it? Ice-cream just out of fruit – yeah right! About this little concoction, I cannot hold back. It IS amazing. You will need to keep going back and trying it and saying – that can’t be right.
It tastes like ice-cream and it is so damn good! This is definitely one for the recipe bible. You will be in awe of the creamy, fruitful deliciousness before your spoon even begins to melt into the bowl.
You can satisfy an ice cream craving guilt-free with this “nice cream“! Seems so simple, that it feels like you are cheating a bit…but to be honest – it’s delectable stuff. And let’s face it, why make it complicated when something this simple can taste insanely delightful!
Once you start making nice creams, you will stop buying store bought ice creams, the creaminess it has is nothing less than an ice cream and the plus point is, it is absolutely healthy!

Ingredients
- 2 medium bananas, sliced, frozen
- 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
- 1/4 cups poppy seeds
- 2 lemons, juice and zest
- 2 tablespoons honey or maple syrup
- Splash of coconut water left over from coconut cream can
Topping
- Fresh lemon zest
Instructions
- Note: Place the can of coconut cream in the fridge or freezer for at least 1-2 hours before making this nice cream to allow coconut cream to separate.Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water as we will be needing it for the liquid in the recipe.Place bananas, hardened coconut cream, honey, lemon juice and zest along with a splash of the coconut water left over in the can of coconut cream to loosen the mixture. The less the better as the nice cream will be thicker. So start with a splash and add more if needed to get things moving. Process until smooth and creamy.Taste test and add more honey or lemon if you think it needs it.Lastly add the poppy seeds and pulse a few times to combine.Serve immediately or store in an airtight container in the freezer for up to one month.
