Lemon Poppy Seed Nice Cream

An easy recipe for cold and creamy, no churn, lemon ice cream, made with fresh lemons and flecked with nutty poppy seeds.

Ingredients

  • 2 medium bananas, sliced, frozen
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1/4 cups poppy seeds
  • 2 lemons, juice and zest
  • 2 tablespoons honey or maple syrup
  • Splash of coconut water left over from coconut cream can

Topping

  • Fresh lemon zest

Instructions

  • Note: Place the can of coconut cream in the fridge or freezer for at least 1-2 hours before making this nice cream to allow coconut cream to separate.
    Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water as we will be needing it for the liquid in the recipe.
    Place bananas, hardened coconut cream, honey, lemon juice and zest along with a splash of the coconut water left over in the can of coconut cream to loosen the mixture. The less the better as the nice cream will be thicker.
    So start with a splash and add more if needed to get things moving. Process until smooth and creamy.
    Taste test and add more honey or lemon if you think it needs it.
    Lastly add the poppy seeds and pulse a few times to combine.
    Serve immediately or store in an airtight container in the freezer for up to one month.
