Lemon Blue Spirulina Popsicles

Cool off on a hot day with a popsicle you can feel good about eating. These naturally dyed blue, healthy coconut popsicles are perfect if you want something cool, sweet and satisfying. Super easy to make, full of flavor, and way healthier than store-bought.
These stunning looking, healthy ice pops are creamy and decadent, bursting with lemon and coconut flavor and full of healthy fats.  A great way of incorporating more good stuff into your diet.
Now lets look at the blue colour.
Blue Spirulina powder has been added to give a pretty vibrant blue effect.
Blue Spirulina, a well-known antioxidant superfood, is the magic ingredient that makes any food look Instagramable (#trendy). This intense deep blue pigment is known as phycocyanin and is extracted from spirulina (blue-green algae).
It is rich in protein, vitamins, minerals, iron, carotenoids and antioxidants and helps protect cells from damage. It is freeze dried to preserve its natural colour and nutrients.
You can get creative and add this beautiful nature product to literally anything for a heavenly nutritional boost and some epic blue instaworthy pictures!
You can add it to water, juices, smoothies, breakfast food, baked food, sweets, yoghurts, cereals or any other foods. For light blue shades, use just a pinch and for a more brilliant blue, use up to a full teaspoon or more.
Its known to have high nutritional value and boost the immune system, increase metabolism and improve digestion! Contains an abundance of B vitamins which can enhance energy levels.

Super cute and super simple to make, the hardest part about it is merely having to wait. If you find yourself eagerly checking the freezer to see if your popsicles have set, don’t feel bad as I did the exact same thing. 😉
This is also an awesome healthy alternative to store bought ones full of unhealthy ingredients that are uber popular among children (and adults too, let’s be real).
If you have little ones following in your dietary footsteps, this is a surefire way to make sure they aren’t missing out on popular cool treats. I truly believe when improving diets we shouldn’t have to turn our backs on the foods that make us happy, simply adapt them!

Ingredients

  • 1 cup coconut milk
  • 1 13.5 oz coconut cream, full fat (solid part only) *see note below
  • 1/4 cup honey or maple syrup
  • 1 tablespoon blue spirulina powder
  • 1-2 lemons, juice and zest (depending on how lemon-ey you like it)
  •  Popsicle tray with 4 popsicle holders
  • Popsicle sticks

Instructions

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.
    Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, to drink, or discard.
    Place coconut milk and cream, honey, blue spirulina powder, lemon juice and zest in a food processor or high speed blender and process until smooth and creamy. 
    Fill the popsicle tray with the blue coconut mixture and add the popsicle sticks
    Freeze for at least 3 hours.
    Run tray under warm water for about 30 seconds to get popsicles out easily.
