Healthy Protein White Fudge

Today I bring you a recipe that is fast, easy and delicious. It requires few ingredients, minutes of melting/stirring time and no candy thermometer is required! Its creamy, rich, and decadent yet healthy!
I’ve included protein or collagen powder to add a little extra protein. When you include it in any meal (even a dessert/snack like this), you will be more satisfied and less likely to keep eating due to the impact protein has on reducing ghrelin, your hunger hormone, and boosting peptide YY (which makes you feel full).
It’s incredibly simple to make and truly delicious. You will love it! It’s great for gifts, dessert platters, or anytime you want a piece of deliciousness. But be warned, its hard to stop at just one piece! I would put it in the category of “bet you can’t eat only one!” But that’s ok, as its healthy and won’t do any harm to your healthy eating plan (if you are reasonable about it!)
This recipe is like regular fudge - super rich, uber decadent - but secretly healthy and guilt-free!  Yup, that means no butter, no white sugar and no sweetened condensed milk…  just pure, fudgy nutty chocolatey goodness.
The big secret here is that you will be using homemade condensed milk, free of the LOADS of sugar in store bought stuff. 
The facts are… manufacturers take out about 60% of the water from the milk to “condense” it down. After they “condense” the milk, they add about 40% sugar to fill the void from the water.
I’m sure you’re asking yourself why the manufacturers do this. Well, the added sugar means the shelf life is longer, plus transporting the milk is easier due to not having to store it in cooler temperatures.
Its always about the convenience to them, rather than people’s health.
But when you take the time and effort to make your own condensed milk, especially if its from coconut cream to make this delightful fudge, you get all the real, natural favors - no artificial food flavourings here! Each little cube is like a piece of heaven.
This fudge is super soft, yet holds its shape long enough for you to pop it in your mouth… where it will then melt in your mouth.
The recipe for the sugar free homemade condensed milk is below in notes. It really very easy to do and you can keep some in your fridge so its ready to add a dollop on EVERYTHING for a super healthy treat.
It will be something you can enjoy regularly as part of a healthy eating plan. Its high in medium-chain triglycerides (MCTs), a form of beneficial fat that can increase energy levels and enhance brain function and many other health benefits.

I have many other fudge flavours I need to make and on my to-do list, but for now, this easy white chocolate fudge is giving me everything I need! It’s so pretty and the perfect canvas for so many fun toppings!

Ingredients

  • 3 cups white chocolate chips
  • 1 cup condensed milk, store bought or sugar free recipe below in notes
  • 1/2 cup plain or vanilla protein or collagen powder
  • Sprinkles, optional

Instructions

  • Line an 8×8 baking dish with parchment paper. Set aside.
    In a large, nonstick saucepan over a very low heat, add white chocolate chips.
    You can use a double boiler if desired.  Or use a microwave, using short intervals (20-30 seconds at 50% power) stirring after each interval.
    Once melted, remove from heat and stir in condensed milk and protein powder and still until combined.
    Immediately pour the mixture into the prepared pan and smooth into an even layer. (The mixture will begin to thicken quickly. I like to use an offset spatula to smooth the surface.)
    Press sprinkles onto the top if using.
    Cover and place in the fridge for 1 hour or until firmly set.
    Remove the fudge from the pan, and using a sharp knife, slice into 1-inch cubes.
    Store at room temperature in an airtight container.
