A deliciously chewy Lemon Cookie made using fresh juice and zest from real lemons. Drizzled with a three ingredient lemon glaze, this single serve cookie is the perfect afternoon treat. It’s a single serve recipe that makes one large (or two smaller) no bake lemon cookie.

Oh yes, the buttery crust and tangy filling of a lemon bar can be so addicting…

But the high amounts of butter, truckloads of sugar, eggs, flour and heavily sugar laden condensed milk used in a traditional recipe for these citrus-infused treats does not play along nicely with a healthy eating plan.

Good thing that my favourite thing to do is take an old fashioned ‘not-so-healthy’ recipe and ‘healthify’ it – turning it into a healthier alternative. And we shrink the recipe so we are not stuck with 20 odd cookies calling our name. Perfect if you don’t have the time to make an entire batch of cookies OR you don’t want lots of cookies leftover.

Just making one is the way to go so we don’t overeat as these bad boys are seriously addictive. They are one of those “bet you can’t eat just one” type of deal. So we remove temptation with just one delicious cookie that WILL tame the fiercest cravings. And you have it all to yourself, you don’t have to share.

Its truly a minimum fuss dessert. You need only 5 ingredients for the cookie and 3 for the lemon drizzle topping! It has 20 grams of protein, low in sugar, made with simple ingredients and is a breeze to make!

When life gives you lemons, we make lemon cookies. It’s just what we do. This yummy version is made up of an oaty, coconutty, lemony combination of ingredients topped with a tangy lemon drizzle topping. Oh my!

They are super easy to make (three cheers for no-bake treats!) and crammed with the perfect balance of tart-sweet flavour. You just mix the ingredients together, form into a cookie shape, drizzle with lemon coconut frosting. Chill. Done.

Because this single lemon cookie is crazy amazing you can feel good about eating it, even for breakfast and not feel one piece of guilt about it!  🙂

Giant Lemon Protein Cookie For One

Ingredients

  • 1/4 cup oat flour (oats blended to a flour)
  • 1 tablespoon coconut flour
  • 1/4 cup coconut (or any) milk
  • 1 scoop protein or collagen peptides powder
  • 1 lemon, juice and zest

Lemon Frosting

  • 1 tablespoon coconut oil, softened
  • 1 tablespoon honey
  • 1/2 lemon, juice and zest

Instructions

  • Mix all ingredients and form into a cookie shape. Pop into the fridge while you make the lemon frosting.

Lemon Frosting

  • Combine all the ingredients, then mix until smooth and creamy.
    Note: If your frosting seems too runny, place the bowl in the fridge to chill for about 10 minutes, then stir until evenly thickened.
    Spread this tart frosting on top of your giant single serve cookie, then chill for 30 minutes, allowing the frosting to set.
