Giant Lemon Protein Cookie For One

A giant lemon cookie that is tender, soft, sweet, tart, bright and protein-rich. Quick and easy recipe. Made from oat and coconut flour and packed with tangy lemon flavor. Each mouthful a bite of sunshine!

Ingredients

  • 1/4 cup oat flour (oats blended to a flour)
  • 1 tablespoon coconut flour
  • 1/4 cup coconut (or any) milk
  • 1 scoop protein or collagen peptides powder
  • 1 lemon, juice and zest

Lemon Frosting

  • 1 tablespoon coconut oil, softened
  • 1 tablespoon honey
  • 1/2 lemon, juice and zest

Instructions

  • Mix all ingredients and form into a cookie shape. Pop into the fridge while you make the lemon frosting.

Lemon Frosting

  • Combine all the ingredients, then mix until smooth and creamy.
    Note: If your frosting seems too runny, place the bowl in the fridge to chill for about 10 minutes, then stir until evenly thickened.
    Spread this tart frosting on top of your giant single serve cookie, then chill for 30 minutes, allowing the frosting to set.
