I love how amazing new food trends are being created on social media internet websites and some of them go viral and get loads of attention. One of them that is making a huge buzz is around what is called “bark” – layers of yummy foods placed in flat layers on top of each other then frozen. Once frozen the “bark” is broken or cut into squares.

The bottom layer is usually something that can be sliced in flat pieces like dates, yogurt, chocolate, cottage cheese, banana slices or even strawberry slices. Then layers of yummy things like dried fruit, nuts, seeds, nut butter, melted chocolate and coconut is added to create a simple and healthy dessert or snack. Then the whole thing is frozen and broken or cut into pieces.

I have tried a few of these recipes recently and they do not disappoint. Its not every day that a food trend exceeds my expectations, but this yogurt bark is definitely a winner. If you are someone who craves chocolate candy bars but wants something a bit more wholesome, this bark recipe is a game-changer. What sets it apart is its blend of yummy ingredients that come together in the perfect balance of sweet, salty and crunchy.

I’ve taken the flavors I love and turned them into something that feels like a treat but is made with nutrient-dense, clean ingredients. A sprinkle of sea salt ties it all together. And with no refined sugars or artificial ingredients, this bark feels like a healthier alternative, but it’s still satisfying like a candy bar.

I will warn you, however, that this yogurt bark is addictive.  The little pieces just never seem to quite satisfy my cravings but you might have more will power than me! Homemade yogurt bark is a great way of lifting simple ingredients to a higher level, and the beauty of it doesn’t reside in the end product only.

Making your own frozen bark is such a fun way of being creative in the kitchen and something you can do with children. Frozen Yogurt Protein Bark: One Pan - No-Bake - So Easy

This Frozen Yogurt Bark is the ultimate healthy dessert or snack! Greek yogurt, creamy peanut butter, sliced bananas, chocolate chips and protein powder combine to form a delicious twist on the classic viral trend.

Ingredients

  • 1 1/2 cups thick Greek-style yogurt, plain or vanilla
  • 1/2 cup walnuts, roughly chopped
  • 1/4 cup peanut (or any other nut or seed) butter
  • 1/4 cup protein powder or collagen peptides powder
  • 1 tablespoon honey or maple syrup optional
  • 1 teaspoon vanilla extract

Chocolate Drizzle Topping

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil

Toppings Optional

  • 1 banana, sliced
  • 1/2 cup peanuts, roasted, crushed

Instructions

  • In a medium-sized bowl, combine yogurt, peanut butter, protein powder, honey and vanilla extract. Whisk until thoroughly mixed. Fold in walnuts.
    Using a spatula, spread the yogurt mixture onto a large baking sheet lined with parchment paper, aiming for a 9×11-inch rectangle. You need it to be around ¼ -½-inches thick.
    Melt the chocolate drizzle topping next.

Chocolate Drizzle Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, drizzle over the yogurt with a spoon then add the sliced bananas and sprinkle with crushed peanuts. Freeze for at least 3 hours, or until firm.
    Cut into pieces or break apart and store in the freezer for up to 3 months.
    When ready to eat, allow to thaw for 5 minutes before enjoying for the best texture. Note that the bark may begin to melt if left out at room temperature for more than 15 minutes.
