Ingredients

Base Crust

  • 1/2 cup rolled oats
  • 1/2 cup desiccated coconut
  • 1/4 cup peanut (or any other nut or seed) butter
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons honey or maple syrup

Creamy Yogurt Filling

  • 1 1/2 cup thick Greek-style yogurt, plain or vanilla
  • 1/2 cup peanut (or any other nut or seed) butter
  • 1/4 cup protein or collagen peptides powder, plain or vanilla
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  • Line a 12 muffin cup pan with parchment paper liners or use a silicone muffin pan.

Base Crust

  • Mix all ingredients together in a bowl until well combined. Spoon around a tablespoon into each of the 12 muffin cups spreading evenly with the back of a spoon.

Creamy Yogurt Filling

  • In a mixing bowl, combine the yogurt, peanut butter, protein powder, honey and vanilla extract until smooth. Taste test and add more honey or vanilla extract if you think it needs it.
    Divide the yogurt "mousse"evenly among the 12 muffin cups.
    Place the cups into the freezer until set.
    Store the yogurt cups in a freezer safe Ziplock bag until ready to enjoy. Allow them to thaw for a little bit before eating.
