Ingredients
Base Crust
1/2cuprolled oats
1/2cupdesiccated coconut
1/4cuppeanut (or any other nut or seed) butter
2tablespoonscoconut oil, melted
2tablespoonshoney or maple syrup
Creamy Yogurt Filling
1 1/2cupthick Greek-style yogurt, plain or vanilla
1/2cuppeanut (or any other nut or seed) butter
1/4cupprotein or collagen peptides powder, plain or vanilla
2tablespoonshoney or maple syrup
1teaspoonvanilla extract
Instructions
Line a 12 muffin cup pan with parchment paper liners or use a silicone muffin pan.
Base Crust
Mix all ingredients together in a bowl until well combined. Spoon around a tablespoon into each of the 12 muffin cups spreading evenly with the back of a spoon.
Creamy Yogurt Filling
In a mixing bowl, combine the yogurt, peanut butter, protein powder, honey and vanilla extract until smooth. Taste test and add more honey or vanilla extract if you think it needs it.Divide the yogurt "mousse"evenly among the 12 muffin cups. Place the cups into the freezer until set.Store the yogurt cups in a freezer safe Ziplock bag until ready to enjoy. Allow them to thaw for a little bit before eating.
