Ingredients

  • 2 cups Greek yoghurt, see note below
  • 1 1/2 cups granola or muesli
  • 1/2 cup any nut or seed butter
  • optional fresh or frozen fruit, honey or maple syrup to make sweeter

Instructions

  • Line a 12-cup cupcake or muffin pan with cup cake liners or use a silicon mold for easy removal.
Mix the nut or seed butter into the yoghurt until it is well combined.
Spoon 1 tablespoon of granola in each muffin cup.
Spoon 1 tablespoon of yoghurt over the granola to bring to the top of the liners. If you have a little extra, feel free to spoon it over the top.
Top with your favourite fruits, and a sprinkling more of granola. Push it in slightly so that when it freezes and expands it stays in.
Freeze for 2-4 hours or until the yoghurt is frozen.

Notes

Note: You can use regular yoghurt, however, the yoghurt cups will have the icyconsistency of  ice blocks/popsicles. If you prefer more of a dense ice cream texture, use Greek yogurt.
