Frozen Vanilla Protein Pops

Experience the delight of guilt-free indulgence with this frozen protein pop recipe – a creamy blend of deliciousness to keep in your freezer for an anytime treat or snack.
They are super easy to make and require very minimal ingredients so you can easily elevate your frozen treat game with this nutritious dessert, proving that healthy can also be delicious.
This recipe is so simple, and comes together quite effortlessly. I absolutely love it out of the freezer and crumbled into a chocolate smoothie for the most epic snack!
It’s shocking how good these are! If you let them thaw a little bit before snacking, they become the perfect texture. These babies are the ultimate healthy sweet treat as the protein content will leave you feeling full while also satisfying and helping to curb sugar cravings while still being healthy!
That’s really the trick with eating healthier, its not limiting or denying yourself yummy things, its about ADDING good stuff so you don’t crave the not-so-good high sugar things that can wreck health.
Its about making sure you get all the good nutrients you need with some extra sweets snuck in. Doesn’t get any better than that.  😊

Ingredients

  • 1 cup thick and creamy Greek yogurt
  • 1/2 cup vanilla protein powder
  • 1/3 cup runny peanut butter
  • 1/3 cup chocolate chips, mini
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 1/4 cups chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Mix all of the protein pop ingredients together until a thick mixture forms.
    Use a small ice cream scoop or a spoon to make tablespoon sized blobs on a parchment lined plate or tray.
    Add popsicle sticks to each pop and freeze for a few hours until firm and set.
    Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the pops after checking they are firm and set. Use the popsicle sticks to hold each pop and dip into the melted chocolate, then place on a rack to dry. Dip twice for extra coating.
    Put the bars into the freezer for at least 4 hours.
    Once chocolate is set and crisp, enjoy your homemade protein pops.
    Makes 6-10 servings depending on size.
