Pistachio Cranberry Energy Bites

This no-bake Energy Bites recipe is easy to make, full of feel-good ingredients, and irresistibly delicious!
Whoever is responsible for the idea that we should mash a bunch of healthy ingredients into one little ball as a snack is an absolute genius in my book.
Moreish snack balls, bliss balls, energy bites, call them what you like, are one of the easiest things to make, and they are a perfect little nutrient-dense bite for a satisfying and beneficial snack! 
This recipe is full of healthy ingredients like protein, healthy carbohydrates and fats along with fibre, minerals and vitamins.
Pop one of these babies into your mouth and you get a boost of energy and satisfy sweet cravings in an instant. They also look and taste delicious and are a great way of incorporating healthy stuff into your diet.
These small but mighty energy balls are the perfect healthy snack for busy families and freeze perfectly for up to 3 months in an aright container - making them a great snack-on-the-go for kids and adults alike!

Ingredients

  • 1/2 cup macadamia nuts
  • 1/2 cup oats, instant or quick
  • 1/2 cup desiccated coconut
  • 1/2 cup shelled pistachio nuts
  • 1/2 cup dried cranberries
  • 2 tablespoons almond (or any other nut or seed) butter
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  • Place all ingredients into a food processor and pulse just until combined leaving large chunks of pistachio and macadamia nuts. Be careful not to over process as its nice to have texture and different sized ‘bits’in your energy balls.
    Use a spoon or cookie scoop to shape the mixture into 8-10 evenly sized energy bites or your desired size. (Mine were about 1-inch in diameter.)
    Alternately, you can line a small baking pan with parchment paper, and press the mixture evenly into the pan. Place in refrigerator for an hour then cut into bars.
    Store covered in the refrigerator for up to 2 weeks or freezer for up to 3 months.
