Coconut Lime Frozen Yogurt Bark

Made with just a handful of ingredients –  white chocolate, toasted almonds, coconut and lime – it’s a delicious flavor combination - just out of the world.
It’s a delicious sweet treat and easy recipe perfect for dessert or an anytime healthy snack. You can break the pieces into whatever size you like; you're the boss of your bark.
A blend of sweet and tart, this is one of the most addictive snacks I have ever made! It is so hard not to keep going back for‘just one more piece’ – it doesn’t last long in our house!
This simple, quick, healthy candy recipe is a must make for a party and makes a great gift for someone special.

Ingredients

  • 1 cup Greek yogurt, plain or vanilla
  • 1 cup white chocolate baking chips
  • 1/2 cup desiccated coconut
  • 1/2 cup almonds, toasted, chopped
  • 1/4 cup coconut oil
  • 1-2 limes, juice and zest (depending on how lime-y you prefer)
  • 2-4 drops green food colouring, optional 

Instructions

  • Line a large cookie sheet with baking paper or aluminum foil.
    In a small saucepan over a low/medium heat melt white chocolate chips and coconut oil together. Stir until melted. Take off heat and let cool for a few minutes. Add yoghurt, coconut, almonds, lime juice and zest and green food colouring if using.
    Stir all together until well combined. Scoop the yogurt mixture onto to the lined cookie sheet and spread out smoothly with a spatula or back of a spoon to ensure it is of an even thickness.
    Place in freezer for 2-3 hours. Once frozen, break into smaller pieces and keep in a freezer bag in the freezer to enjoy.
