Ingredients
1cupGreek yogurt, plain or vanilla
1cupwhite chocolate baking chips
1/2cupdesiccated coconut
1/2cupvanilla protein powder
1/2cupalmonds, toasted, chopped
1/4cupcoconut oil
1-2limes, juice and zest (depending on how lime-y you prefer)
2-4dropsgreen food colouring, optional
Instructions
Line a large cookie sheet with baking paper or aluminum foil.In a small saucepan over a low/medium heat melt white chocolate chips and coconut oil together. Stir until melted. Take off heat and let cool for a few minutes. Add yoghurt, coconut, protein powder, almonds, lime juice and zest and green food colouring if using.Stir all together until well combined. Scoop the yogurt mixture onto to the lined cookie sheet and spread out smoothly with a spatula or back of a spoon to ensure it is of an even thickness.Place in freezer for 2-3 hours. Once frozen, break into smaller pieces and keep in a freezer bag in the freezer to enjoy.
