When I made this recipe, I knew with the first bite that I had hit upon something special! When I was trying to decide what to call them, my husband suggested I call them “Some More” Bars – because that is what he is always saying when these are around! Seriously, the first batch I made was GONE in less than ten minutes, and my grandkids (and husband) were asking when I was going to make more.

These little gems are packed full of good-for-you ingredients. Coconut butter and flour, protein powder, honey and flavoured with lemon and vanilla extract – all power house ingredients that will treat your body right and make your taste buds sing at the same time!

They are super easy to make – just throw everything in your food processor and give it a whirl! These don’t have as much protein as a store bought bar, but they are still decent (and don’t have any questionable ingredients). Not only delicious but also healthy. Made with a perfect blend of 6 ingredients you can get at your local store.

This recipe is fast, easy and delicious. It requires few ingredients, and only minutes of melting/stirring time. It has just 3 main ingredients and is easier to make than traditional fudge as you don’t need a candy thermometer.  It also stores well so you can make it ahead of time for gifting or bringing to an event. It’s awesome any time you want a piece of deliciousness.

It is just like regular fudge – super yummy – but secretly healthy and guilt-free!  Yup, that means no butter, no white sugar and no sweetened condensed milk…  just pure, fudgy coconutty goodness. Velvety, smooth, bright and healthy protein fudge bars that look a picture of yum! Its the perfect treat if you love coconut like I do.  I’m obsessed with coconuts, they are my favorite ingredient in desserts and healthy snacks.

Coconut Butter Protein Fudge Bars

Delicious no bake Coconut Butter Protein Fudge Bars made with simple ingredients like coconut butter and flour, honey, vanilla extract and your favorite protein powder. A sweet, chewy, creamy and coconutty delight!

Ingredients

  • 3/4 cup coconut butter, store bought or homemade recipe below in notes
  • 1/2 cup coconut or oat flour (oats blended to a flour)
  • 1/4 cup protein or collagen peptides powder, plain or vanilla
  • 2-3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Instructions

  • Line an 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or use a silicon loaf pan or bar mold.
    Soften the coconut butter by placing the jar in hot water until it softens and melts a bit (unless it’s hot and the coconut butter is creamy already).
    Place all the ingredients except the chocolate chips in a food processor and process until thoroughly combined.
    Place into desired mold. Sprinkle chocolate chips on top and gently press in a bit.
    Place in freezer to harden - about 30 minutes.
    Cut into 8 bars or more smaller squares or desired shapes (or remove from molds) and store in the refrigerator.
    These bars will soften quickly at room temperature so keep them in the fridge for up to 1 week or freezer for up to 3 months.
