Chocolate strawberry fudge is a quick and easy no-bake dessert idea! It’s made with only four ingredients including condensed milk, chocolate chips, fresh strawberries and a splash of vanilla extract. This chocolate strawberry dessert is delicious all year long, but it’s absolutely perfect for Valentine’s Day!

If you love chocolate covered strawberries, this fruity fudge will be your new favorite treat! Loaded with juicy strawberries and rich chocolate, its ridiculously quick and easy to make. You can effortlessly make it in the microwave with one bowl and a baking dish. There’s no stovetop, no oven, and no baking required!

Can you believe it takes just 10 minutes to create? The hardest part is waiting for it to set in the refrigerator… but it’s totally worth it in the end!

To make this fudge, you will need the star of the show: fresh strawberries! Just find the freshest, sweetest ones you can – and if you can’t find any good ones, you can always use raspberries or another berry instead.

When strawberries are in season they are so good it doesn’t take much to turn them into a delicious chocolate treat – just 3 more ingredients in fact!  Its the most simple dessert and I love having it in my freezer.

This Chocolate Strawberry Fudge is just like regular fudge – super rich, uber decadent – but it’s secretly healthy and guilt-free!  Yup, that means no butter, no truckloads of white sugar…  just pure, fudgy goodness.

The big secret here is that you will be using homemade condensed milk, free of the LOADS of sugar in store bought stuff (recipe below in notes).

The facts are… manufacturers take out about 60% of the water from the milk to “condense” it down. After they “condense” the milk, they add about 40% sugar to fill the void from the water.

I’m sure you’re asking yourself why the manufacturers do this. Well, the added sugar means the shelf life is longer, plus transporting the milk is easier due to not having to store it in cooler temperatures.

Its always about the convenience to them, rather than people’s health.

But when you take the time and effort to make your own condensed milk, especially if its from coconut cream to make this delightful fudge, you get all the real, natural coconut flavor – no artificial food flavorings here!  Each little cube is like a piece of heaven.

This fudge is super soft, yet holds its shape long enough for you to pop them in your mouth…  where they then melt in your mouth.

The recipe for the homemade condensed milk is below in notes. It really very easy to do and you can keep some in your fridge so its ready to add a dollop on EVERYTHING for a super healthy treat.

Trust me when I say it is well worth the effort to make it as it takes everything you add it up a few levels. It will be something you can enjoy regularly as part of a healthy eating plan. Its high in medium-chain triglycerides (MCTs), a form of beneficial fat that can increase energy levels and enhance brain function and has many other health benefits.

MCTs also help people lose weight by making them feel fuller longer and encouraging fat burning, they also have anti-microbial and anti-inflammatory properties that can boost the immune system and promote healthy skin.

If you want to get fancy you can top if all off with an optional chocolate drizzle, mostly for looks. Though it does add a nice little chocolate crunch on top! You can do the drizzle, or skip it. Your call. Either way, you will be left with a pan full of deceptively simple, irresistibly delicious Chocolate Strawberry Fudge!

Ingredients

  • 1 cup condensed coconut milk – store bought or sugar free recipe below in notes
  • 2 cups chocolate chips
  • 2 cups chopped/sliced strawberries
  • 2 teaspoons vanilla extract

Instructions

  • If you have chosen to make your own sugar free condensed milk, make it first so its ready to go when you want to make the fudge.
    Line an 7×5-inch loaf pan with parchment paper, leaving some paper hanging over the edges. This will prevent the fudge from sticking to the pan.
    Or use a silicon pan or mold or you can even make this fudge in parchment muffin liners inside a12-hole muffin pan for little individual strawberry fudge cups.
    In a large bowl, add the chocolate chips. Pour condensed coconut milk over the chocolate chips. Microwave for 90 seconds. Add vanilla extract then whisk together to evenly combine the ingredients.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the condensed coconut milk together.
    Pour the fudge into the baking dish. Spread evenly across the bottom of the dish. Add chopped/sliced strawberries on top, slightly pressing them into the fudge.
    Chill fudge in the refrigerator for 2 hours or until firm. Lift parchment paper out of the pan to easily remove the fudge. Slice into 12 bars or more smaller squares.
    Store in fridge for up to 1 week or in freezer for up to 2 months.
