A no bake Chocolate Caramel Roll is a delicious dessert or treat that you have to make! It is easy to put together, doesn’t require an oven, AND, happens to be on the healthier side.
The base is sweetened with honey and the creamy caramel center is made with dates and cocoa powder among a few other things. That sounds super easy, right? Well, promise, it is!
This delicious chocolate date roll is one of my favorite treats to keep around. The rolls is made with oat and almond flour held together with almond butter. The filling is blended dates, peanut butter, cocoa powder for a chocolatey hit and your favorite protein powder for a healthy boost.
The mix is rolled into a two layer log then chilled and cut into slices. Enjoy for a boost of energy throughout the day, or serve them at your next family gathering. It is the perfect snack or dessert that everyone will love. The dough is rich, fudgy, and deeply chocolatey, with just the right amount of sweetness from honey. The filling is smooth, creamy, and naturally sweet from dates, with a hint of warm vanilla.

While this recipe calls for a mix of almond butter and peanut butter, you can easily use all peanut butter if that’s your preference, I just love the combo of both! But any nut butter adds such a rich, robust flavor that pairs beautifully with the chocolate. No baking or cooking needed, made with wholesome ingredients and so darn simple to make.

Chocolate Caramel Protein Roll
Ingredients
Base Roll
- 1 cup almond flour
- 1/3 cup oat flour (oats blended to a flour)
- 1/2 cup cocoa powder
- 1/3 cup almond (or any other nut or seed) butter
- 1/4 cup protein or collagen peptides powder
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
Date Caramel Filling
- 1 cup dates, soaked 30 minutes and drained
- 1/2 cup peanut (or any other nut or seed) butter
- 2 teaspoons vanilla extract
- 1/4 cup any milk
Instructions
- In a food processor, combine the oat flour, almond flour, cocoa powder, almond butter, protein powder, honey and vanilla extract.Blend until a thick dough forms. if the dough is too dry, add milk, 1 tablespoon at a time, until you reach the desired consistency. If the dough is too thin, add more almond flour or oat flour, 1 tablespoon at a time, until it thickens up.Lay the dough on a sheet of parchment paper and place another sheet of parchment paper on top of the dough. Roll out the dough into a large rectangle around ¼-½-inches thick. The parchment paper will prevent the dough sticking to the counter or rolling pin.
Date Caramel Filling
- In the same food processor (no need to wash it from the dough), combine the dates, peanut butter, vanilla extract and milk and blend until a smooth mixture forms.Spread the prepared date mixture evenly onto the rolled-out dough. Carefully roll up the dough into a log, place the log in the freezer for 45 minutes until firm.Once firm, remove the roll from the freezer and slice into 10-12 individual slices to serve. Store in the freezer but thaw before eating!
