Chocolate Caramel Protein Roll

Ingredients

Base Roll

  • 1 cup almond flour
  • 1/3 cup oat flour  (oats blended to a flour)
  • 1/2 cup cocoa powder
  • 1/3 cup almond (or any other nut or seed) butter
  • 1/4 cup protein or collagen peptides powder
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Date Caramel Filling

  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup peanut (or any other nut or seed) butter
  • 2 teaspoons vanilla extract
  • 1/4 cup any milk

Instructions

  • In a food processor, combine the oat flour, almond flour, cocoa powder, almond butter, protein powder, honey and vanilla extract.
    Blend until a thick dough forms. if the dough is too dry, add milk, 1 tablespoon at a time, until you reach the desired consistency. If the dough is too thin, add more almond flour or oat flour, 1 tablespoon at a time, until it thickens up.
    Lay the dough on a sheet of parchment paper and place another sheet of parchment paper on top of the dough. Roll out the dough into a large rectangle around ¼-½-inches thick. The parchment paper will prevent the dough sticking to the counter or rolling pin.

Date Caramel Filling

  • In the same food processor (no need to wash it from the dough), combine the dates, peanut butter, vanilla extract and milk and blend until a smooth mixture forms.
    Spread the prepared date mixture evenly onto the rolled-out dough. Carefully roll up the dough into a log, place the log in the freezer for 45 minutes until firm.
    Once firm, remove the roll from the freezer and slice into 10-12 individual slices to serve. Store in the freezer but thaw before eating!
