Chocolate Banana Pie Bars

If there is one combo I truly love, it’s banana and chocolate. I remember back when I was a kid, my mom taught me this little trick of sticking chocolate chips on a banana for a quick and easy chocolate treat. I LOVED it.
Sometimes now I still do the same, dipping a banana into some chocolate chips. I’m not going to lie, it’s the best snack when you need a quick little chocolate fix.
These beautiful bars are made with simple ingredients that you most likely already have on hand. They look as impressive as they taste, and you will love that they are naturally sweetened.
This no bake recipe is easy to make and bursting with flavor, using good-for-you ingredients. The little bars are the perfect portion-controlled treat for an any time healthy snack or dessert! Or any time you're craving a little something sweet!
Instead of using heavily sweetened condensed milk, cream cheese and loads of refined sugar, these babies are made with coconut milk and bananas on an almond, coconut base crust topped with chocolate.
The bananas are thrown in a blender with cashews and coconut milk to form the irresistible creamy middle layer.  It makes me excited that such beautiful and delicious creations can be made purely from natural ingredients.
I love that you don’t have to use your oven, and the bars are just the right size to satisfy a sweet tooth without over indulging. Creamy, slightly tart, perfectly sweet, and100% irresistible. Better than any store bought pies and the perfect healthy,simple dessert to feed a crowd (or just you).

Ingredients

Base Crust

  • 1 cup almonds or walnuts
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup desiccated coconut
  • 1/4 cup cocoa powder
  • 1/4 cup coconut oil, melted

Banana Filling

  • 1 cup cashews, soaked 3+hours and drained
  • 2 large ripe bananas
  • 1 cup coconut milk or cream, full fat
  • 1/4 cup honey or maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon cocoa powder
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

Base Crust

  • Line an 8 x 8-inch baking pan with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or use a silicon pan.
    Place almonds in a food processor and process until broken down and crumbly. Add dates, coconut, cocoa and coconut oil and continue to process until mixture is a thick, sticky dough.
    Remove the crust from the food processor and press evenly into the lined pan. Set aside.

Banana Filling

  • Place cashews in a food processor and process until broken down and crumbly. Add bananas, coconut milk, honey, coconut oil, cocoa, vanilla extract and continue to process until smooth and creamy.
    Using a spatula,spread filling over base crust.
    Place in refrigerator for 1-2 hours or until pie is set.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted pour the chocolate over the banana filling and place back in fridge or freezer for30 minutes to allow the chocolate topping to harden.
    When ready to serve, top with sliced bananas and drizzle with chocolate if desired. Cut into16 bars or more smaller slices.
    Store for up to 1week in fridge or up to 3 months in freezer. If frozen let thaw before eating.
