Blueberry Ginger Ice Cream
This blueberry ginger ice cream is so simple to make and so good to eat. Made with fresh, frozen fruit and a splash of plant milk - that’s it! A healthy and delicious dessert or treat.
Ingredients
- 2 large (or 3 small) bananas, peeled, sliced, then frozen
- 1 cup frozen blueberries
- 1/2 -1 teaspoon ground ginger (or 2 teaspoons of fresh, finely minced ginger or ginger juice)
- 2 teaspoons lemon juice
- 1/4-1/2 cup milk of choice
Instructions
- Place bananas in a food processor and process until they have turned into soft serve. Then add the blueberries, ginger, 1/4 cup milk, and lemon, and continue processing adding more milk if necessary until your mixture is creamy and scoops easily.
