They are super versatile and I love to make them for friends and family, especially around the holidays or a summer potluck. I also love no bake recipes as they are very forgiving when it comes to the ingredients and amounts. You can play around and swap ingredients based on what you have and not be too meticulous with the measurements without ending up with a total disaster that often happens when you do the same with baked goods!

I love these little bites as they taste like an indulgent treat, but they are secretly loaded with protein, fiber, and all sorts of good-for-you ingredients. I’m sure you and your family will love them.

Banana Date Chocolate Protein Bites
Ingredients
- 8 large Medjool dates, pitted
- 16 slices of ripe banana
- 1 cup thick Greek-style yogurt
- 1/2 cup thick nut butter (I used crunchy peanut butter)
- 1/4 cup protein or collagen peptides powder
Chocolate Coating
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Instructions
- Line a small tray or dish with parchment paper. Open up the Medjool dates and flatten them as much as possible.Mix the banana slices with the yogurt and protein powder and place two coated slices on each date.Place each banana topped date on the lined tray and freeze for 30 minutes and then add a spoonful of nut butter to each one.Place back in the freezer for about 30 minutes. then, melt the chocolate chips and coconut oil.
Chocolate Coating
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Working quickly,using two forks, dip one date at a time into the bowl of melted chocolate until it is fully coated. Lift the date from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining dates then place back on the parchment lined tray.Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. Sprinkle with flaky salt if desired, then chill until chocolate has set.Store in the fridge in an airtight container. you can place pop them in the freezer for 10 min before you eat one if a firmer texture is desired! If frozen let unthaw for10 minutes before eating so the date is soft.
