Here is a really quick and easy protein-rich recipe if you want something sweet in the freezer that requires no baking or blending! Only takes about 10 mins and they are super delicious.

Ingredients
8largeMedjool dates, pitted
16slices of ripe banana
1cupthick Greek-style yogurt
1/2cupthick nut butter (I used crunchy peanut butter)
1/4cupprotein or collagen peptides powder
Chocolate Coating
1cupchocolate chips
1tablespooncoconut oil
Instructions
Line a small tray or dish with parchment paper. Open up the Medjool dates and flatten them as much as possible.Mix the banana slices with the yogurt and protein powder and place two coated slices on each date.Place each banana topped date on the lined tray and freeze for 30 minutes and then add a spoonful of nut butter to each one.Place back in the freezer for about 30 minutes. then, melt the chocolate chips and coconut oil.
Chocolate Coating
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Working quickly,using two forks, dip one date at a time into the bowl of melted chocolate until it is fully coated. Lift the date from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining dates then place back on the parchment lined tray.Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. Sprinkle with flaky salt if desired, then chill until chocolate has set.Store in the fridge in an airtight container. you can place pop them in the freezer for 10 min before you eat one if a firmer texture is desired! If frozen let unthaw for10 minutes before eating so the date is soft.
