Cookies for breakfast? YASSS!!! Life is good. I first made these amazing, super nourishing blueberry breakfast cookies almost 8 years ago and they quickly became one of my favorite easy breakfasts and snacks.

These healthy blueberry breakfast cookies are chock full of good for you ingredients. Soft, chewy, and naturally sweetened, these breakfast cookies are a wholesome and nutritious way to start your day. Packed with oats, dried or fresh blueberries and ripe bananas, they make for a perfect grab-and-go breakfast or healthy snack.

Heart-healthy chia seeds help hold the cookies together and add crunch along with the walnuts. Honey contributes just the right touch of sweetness, while cinnamon comes in with warm, earthy undertones.

Freezer-friendly and the perfect breakfast or snack for busy weeks! Not only are they good for you, they are easy to make and SO DELICIOUS!  Oh, and they taste like a chewy oatmeal cookie and your fav blueberry muffin combined. Sounds a little too good to be true, right?

How you can customize the cookies:

Choose the nuts. Feel free to substitute chopped pecans or almonds for the walnuts, or leave them out if you would like.

Make them decadent. I sometimes like to add 1/4 cup chocolate chips to the batter for an extra treat! White chocolate chips would also be delicious, and you could even melt some chocolate and drizzle it on top.

Try new fruits. I love the burst of fresh blueberries in each bite, but you could also try using fresh raspberries or dried cranberries!

Banana Blueberry Breakfast Protein Cookies

These amazing, healthy no bake, banana blueberry breakfast cookies taste like a cross between a blueberry muffin and a chewy oatmeal cookie and are made with super nourishing ingredients. WIN!

Ingredients

Dry Mix

  • 1 cup rolled oats
  • 3/4 cup dried blueberries or 1 cup fresh or frozen blueberries
  • 1/2 cup desiccated coconut
  • 1/2 cup walnuts, chopped
  • 1 scoop protein or collagen peptides powder
  • 1 teaspoon ground cinnamon

Wet Mix

  • 1 ripe banana, mashed
  • 3/4 cup almond or cashew butter
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond milk (or milk of choice)
  • 1 teaspoon vanilla extract

Instructions

  • In a large mixing bowl, combine the oats, blueberries, coconut, walnuts, protein powder and cinnamon.
    In a medium saucepan over low heat, combine the nut butter, honey and almond milk. Make sure the mixture doesn’t boil. Just warm it enough to yield a smooth mixture.
    Turn off the heat stir in the mashed banana, milk and vanilla extract. Pour the nut butter banana mixture over the dry ingredients. Stir well to combine. Add a little more milk, a tablespoon at a time if you think the mixture is too dry.
    Line a baking sheet with parchment paper. Using a large cookie scoop, scoop 10-12 (or your preferred size) of the dough onto the sheet.
    With wet hands, flatten each mound into a round disk. Freeze for several hours until firm, then transfer to an airtight container and keep refrigerated. Wrap cookies individually for an easy grab-and-go breakfast.
    Will keep in the freezer for up to 3 months.
