If you love a little sweet treat then you will love these Almond Tahini Coconut Protein Bites. They are made from healthy ingredients like almonds, tahini (sesame seed paste) and coconut and naturally sweetened with dates.

Easy, no-bake, full of flavor and nutrition, they have a fudgy texture and are so delicious – a healthy snack that satisfies that sugar craving. Packed with iron, folate, and magnesium, this quick snack takes just 15 minutes to prepare.

I’ve probably said this about a million times before and I don’t think I will ever stop saying it – tahini and dates are the best dessert combination EVER! Even better when paired with almonds and coconut.  That flavour combination is one made in heaven!

Every time I post a recipe that includes tahini I still get asked the question ‘what is tahini?’. It surprises me because it seems to me that tahini is now everywhere. So many people on social media use it in both sweet and savoury recipes. It’s become somewhat of a trendy ingredient.

That part doesn’t surprise me at all – I’ve been singing its praises for years. I add it to so many of my recipes – it’s by far one of my all-time favourite foodie ingredients to use, especially in desserts.

Tahini, one of the main ingredients in this recipe, is pure sesame seed paste, which adds a slightly bitter, nutty flavor. Combined with the properties of coconut oil, mixing these together allows the tahini to harden up in the freezer, becoming a chewier texture that you can enjoy as dessert!

You will love the toasty tahini flavor and with just a small handful of healthy ingredients, these tahini protein cups are an easy treat or snack, to keep stashed away for …well, any reason!

It’s a wonderful thing that healthy fats have become popular with the keto movement. No longer is eating a mouthful of fatty goodness frowned upon. After decades of playing the villain, humans once again embraced healthy, real food fats.

Incredibly healthy foods with fats like tahini and coconut oil join forces in these delicious small but mighty treats. No baking or cooking needed, made with wholesome ingredients and so darn simple to make.

They are the perfect clean eating dessert!  And, even better, you only need a few ingredients to make them. This recipe is really the perfect treat for an any time healthy snack or dessert! Or any time you are craving a little something sweet but want to stay on track with your healthy eating plan.

You can make them as big or as small as you like. I sometimes use a chocolate silicon mould to make mini bites.  Or you can also use paper cupcake cases in a regular size muffin pan. This option will give you 5-6 large cups instead of the 10 mini cups.

As well as being naturally vegan, gluten-free and nut-free, they are also made with no added processed sugar. I only use whole dates to sweeten them. These almond, tahini, date and coconut protein bites are the perfect healthy snack.

Almond Tahini Date Protein Cups

These almond tahini date protein bites are full of protein, fiber, vitamins, and minerals. The simple wholefood ingredients are almonds, coconut, tahini, dates and plenty of satisfying add-ins! High in healthy fats and protein. They make a lovely snack or healthier treat to enjoy after dinner.

Ingredients

  • 1 cup almonds or walnuts
  • 1 cup desiccated coconut
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup oat flour (oats blended to a flour)
  • 1/3 cup tahini (sesame seed paste) or any nut butter
  • 1/4 cup protein or collagen peptides powder
  • 2 tablespoons coconut oil, melted

Chocolate Topping

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • Handful of crushed almonds

Instructions

  • In a food processor,combine the almonds, coconut, dates, oat flour, tahini, protein powder and coconut oil and process broken down a sticky dough is formed.
    If the mixture seems a little dry, add water a tablespoon at a time and blend further.
    Press the dough into silicon muffin molds or into a 7 x 5-inch parchment paper lined tray as a slice.  

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, pour the melted chocolate over the slice and top with crushed almonds before placing it in the fridge to set for a few hours.
    Store in fridge for up to 1 week or freezer for up to 3 months.
