Ingredients
1 cupalmonds or walnuts
1 cupdesiccated coconut
1cupdates, soaked 30 minutes and drained
1/2cupoat flour (oats blended to a flour)
1/3cuptahini (sesame seed paste) or any nut butter
1/4cupprotein or collagen peptides powder
2tablespoonscoconut oil, melted
Chocolate Topping
1cupchocolate chips
1tablespooncoconut oil
Handful of crushed almonds
Instructions
In a food processor,combine the almonds, coconut, dates, oat flour, tahini, protein powder and coconut oil and process broken down a sticky dough is formed.If the mixture seems a little dry, add water a tablespoon at a time and blend further.Press the dough into silicon muffin molds or into a 7 x 5-inch parchment paper lined tray as a slice.
Chocolate Topping
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, pour the melted chocolate over the slice and top with crushed almonds before placing it in the fridge to set for a few hours.Store in fridge for up to 1 week or freezer for up to 3 months.
