If you love lemon desserts, these Lemon Protein Bars With Condensed Milk are going to be right up your street! They are sweet, creamy, tangy and wonderfully satisfying, with two delicious layers that come together to create one irresistible no-bake slice.

On top is a smooth, creamy lemon layer made with homemade sugar-free condensed coconut milk. It is rich and velvety, with a fresh citrus flavour that balances beautifully with the sweetness of the base.
And because we are making these the Blended Bites way, there is protein in the mix too!
These bars are perfect when you want something that tastes like a proper treat but also includes nourishing ingredients. No oven, no complicated techniques and no need to give up your favourite sweet flavours.
Just simple ingredients, a little blending and a delicious lemony reward.
Why You Will Love These Lemon Protein Bars
The magic of this recipe is the contrast between the two layers.
The oat, coconut and date base is chewy, slightly nutty and naturally sweet. Dates help bind the ingredients together, while oats provide texture and coconut adds that lovely tropical flavour.
Then comes the creamy lemon topping. Homemade sugar-free condensed coconut milk gives this layer its rich, smooth consistency without relying on traditional sweetened condensed milk. Fresh lemon juice adds the tangy flavour, while lemon zest brings out those fragrant citrus notes.
Adding protein powder is an easy way to increase the protein content of your homemade treats. It also makes these bars a more substantial snack than a conventional sweet slice.
The result is a refreshing lemon dessert with a deliciously creamy topping and a chewy, coconutty base.
The Secret Is Homemade Sugar-Free Condensed Coconut Milk
Traditional condensed milk is sweet, thick and creamy, making it a popular ingredient in slices and desserts. For this recipe, we are using homemade sugar-free condensed coconut milk instead. It gives the lemon layer its creamy character while keeping the recipe aligned with a more nourishing approach to treats.
Because homemade versions can vary in thickness and sweetness, make sure your condensed coconut milk is properly chilled and thick before using it. This helps the topping set more successfully.
Fresh lemon juice and finely grated zest are essential for that unmistakable lemon flavour. Taste the mixture as you go and adjust the zest to suit your preference.
A little tip: Protein powders vary in sweetness and absorbency, so you may need to adjust the amount of liquid or protein powder slightly to get the ideal creamy consistency.
Why Protein Belongs In Your Treats
Protein isn’t just for gym-goers or people following strict eating plans. It’s an important nutrient for everyday life, helping maintain muscle and supporting the body’s normal repair processes.
Adding protein powder to homemade bars is one simple way to boost their protein content without turning them into a completely different recipe.
At Blended Bites, the philosophy is Addition Eating: rather than focusing on everything you should remove from your diet, look at what you can add to make your favourite foods more nourishing.
Oats, coconut, dates, lemon and protein powder work together to create a treat that is full of flavour and texture. You can enjoy something sweet while including ingredients that contribute more than just taste.
That is a delicious way to approach healthy eating!
A Little Lemon Sunshine
These Lemon Protein Bars With Condensed Milk are proof that a nourishing treat can still feel indulgent. The chewy oat, coconut and date base, paired with a creamy, tangy lemon topping, makes every bite a lovely balance of textures and flavours.
Make a batch ahead, keep them chilled and enjoy a square whenever you fancy something sweet. No baking, no fuss – just a fresh, lemony treat made the Blended Bites way.
These bars are easy to prepare, but they need chilling time so the layers can firm up before slicing. 💛

Ingredients
Oat, Coconut And Date Base
- 1 cup rolled oats
- 1/2 cup desiccated coconut
- 1 cup soft, pitted dates
- 1 scoop vanilla protein powder
- 1-2 tablespoons water, as needed
- Pinch of salt
Creamy Lemon Layer
- 1 cup condensed coconut milk, thick and chilled. Store bought or homemade recipe below in notes.
- 1 scoop vanilla protein powder
- 2-3 tablespoons fresh lemon juice, to taste
- Finely grated zest of 1 lemon
- 1 tablespoon coconut flour, if needed to thicken
Instructions
- Note: If you are making your own sugar free condensed milk, make this first so it can be thickened and chilled. If needed add the optional coconut flour to further thicken. (recipe below in notes).Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
Oat, Coconut And Date Base
- Add the oats, coconut, dates, vanilla protein powder and salt to a food processor. Blend until the mixture starts clumping together. Add water a teaspoon at a time if needed.Transfer the mixture to your prepared tin and press it down into an even layer.
Creamy Lemon Layer
- In a bowl, mix the condensed coconut milk, protein powder, lemon juice and lemon zest until smooth. If the mixture is too thin, stir in a little coconut flour and allow it to stand briefly to thicken.Spread the creamy lemon mixture evenly over the base.Chill until firm. Refrigerate for at least 4 hours, or until the topping is set enough to slice. For a firmer finish, place the slice in the freezer for 30–60 minutes before cutting.Lift the slice out using the baking paper and cut into 8-12 bars depending on your size preference with a sharp knife. Store in an airtight container in the refrigerator.Blended Bites Tips 💡Use soft dates: If yours are dry, soak them in warm water for 10 minutes, then drain well.Adjust the lemon: Add more zest for a stronger citrus flavour without making the topping too runny.Check the consistency: Different protein powders absorb different amounts of moisture, so add the optional coconut flour gradually.Keep them chilled: The creamy topping is best stored in the refrigerator. You can also freeze individual bars for a handy treat.Make them your own: Sprinkle a little extra lemon zest or coconut over the top before chilling.
