Raspberry Coconut Filling
- 1 1/2 cups desiccated coconut
- 1/2 cup vanilla protein powder
- 1/2 cup raspberry jam – store bought or homemade recipe below in notes
- 3 tablespoons coconut cream or melted coconut oil
- 2-3 tablespoons maple syrup or honey
- 2 tablespoons almond butter or cashew butter
- 1 teaspoon vanilla extract
Optional Toppings
- Freeze-dried raspberry crumbs
- Extra shredded coconut
- Drizzle of white chocolate
Instructions
- Add shredded coconut, protein powder, coconut cream, maple syrup, nut butter, and vanilla to a food processor.Blend until the mixture becomes sticky and holds together when pressed.If needed, add 1–2 teaspoons of water or milk to help it combine.Scoop a small portion of the coconut mixture and flatten it in your palm. Place a tiny dollop of raspberry jam in the center.💡Tip: Keep the jam dollop small and centered. Too much filling bursts through the coconut shell when you shape the ball.Fold the coconut mixture around the jam and gently roll between your palms into a ball, sealing completely.Place each ball on a parchment-lined tray and chill for at least 1 hour until firm.Store in the fridge for up to 1 week or freeze for up to 2 monthsBest enjoyed chilled for the perfect creamy texture.
