Ingredients

Oat, Coconut And Date Base

  • 1 cup rolled oats
  • 1/2 cup desiccated coconut
  • 1 cup soft, pitted dates
  • 1 scoop vanilla protein powder
  • 1-2 tablespoons water, as needed
  • Pinch of salt

Creamy Lemon Layer

  • 1 cup condensed coconut milk, thick and chilled. Store bought or homemade recipe below in notes.
  • 1 scoop vanilla protein powder
  • 2-3 tablespoons fresh lemon juice, to taste
  • Finely grated zest of 1 lemon
  • 1 tablespoon coconut flour, if needed to thicken

Instructions

  • Note: If you are making your own sugar free condensed milk, make this first so it can be thickened and chilled. If needed add the optional coconut flour to further thicken. (recipe below in notes).
    Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.

Oat, Coconut And Date Base

  • Add the oats, coconut, dates, vanilla protein powder and salt to a food processor. Blend until the mixture starts clumping together. Add water a teaspoon at a time if needed.
    Transfer the mixture to your prepared tin and press it down into an even layer. 

Creamy Lemon Layer

  • In a bowl, mix the condensed coconut milk, protein powder, lemon juice and lemon zest until smooth. If the mixture is too thin, stir in a little coconut flour and allow it to stand briefly to thicken.
    Spread the creamy lemon mixture evenly over the base.
    Chill until firm. Refrigerate for at least 4 hours, or until the topping is set enough to slice. For a firmer finish, place the slice in the freezer for 30–60 minutes before cutting.
    Lift the slice out using the baking paper and cut into 8-12 bars depending on your size preference with a sharp knife. Store in an airtight container in the refrigerator.

    Use soft dates: If yours are dry, soak them in warm water for 10 minutes, then drain well.
    Adjust the lemon: Add more zest for a stronger citrus flavour without making the topping too runny.
    Check the consistency: Different protein powders absorb different amounts of moisture, so add the optional coconut flour gradually.
    Keep them chilled: The creamy topping is best stored in the refrigerator. You can also freeze individual bars for a handy treat.
    Make them your own: Sprinkle a little extra lemon zest or coconut over the top before chilling.
