Pineapple Ice Cream 2-Ingredient

Make the best homemade Pineapple Ice Cream with canned coconut milk and frozen pineapple chunks in a food processor. Fresh, creamy, and irresistibly delicious!
Made with just two ingredients, and in under 5 minutes. It tastes like a pina colada and is so refreshing it will make you feel like you are relaxing on a beach somewhere in the tropics!
This creamy pineapple ice cream is a must try for the BEST healthy dessert or treat.

Ingredients

  • 4-5 cups frozen pineapple chunks
  • 1/4-1/2 cup coconut milk or cream, full fat

Instructions

  • Add frozen pineapple chunks to food processor and pulse until broken down and crumbly.
    Slowly add in coconut milk, starting with ¼ cup and adding more as necessary, and continue to process until smooth and creamy.
    Either serve immediately, or transfer the ice cream to a parchment-lined loaf pan and freeze for 2-3 hours.
    To serve, remove from freezer and let sit at room temperature for 5 minutes before scooping and enjoying.
