Healthier Nut Fudge
Today I bring you a recipe that is fast, easy and delicious. It requires few ingredients, minutes of melting/stirring time and no candy thermometer is required! Its creamy, rich and decadent. It’s incredibly simple to make, all melted and mixed in one saucepan and truly delicious. You will love it! It’s great for gifts, dessert platters, or any time you want a piece of deliciousness. This Nut Fudge is like regular fudge -super rich, uber decadent - but secretly healthy and guilt-free! Yup, that means no butter, no white sugar and no sweetened condensed milk… just pure, fudgy, nutty goodness.The big secret here is that you will be using homemade condensed milk, free of the LOADS of sugar in store bought stuff. The facts are… manufacturers take out about 60% of the water from the milk to “condense” it down. After they “condense” the milk,they add about 40% sugar to fill the void from the water. I’m sure you’re asking yourself why the manufacturers do this. Well, the added sugar means the shelf life is longer, plus transporting the milk is easier due to not having to store it in cooler temperatures.Its always about the convenience to them, rather than people’s health.But when you take the time and effort to make your own condensed milk, especially if its from coconut cream to make this delightful fudge, you get all the real, natural favors - no artificial food flavourings here! Each little cube is like a piece of heaven.This fudge is super soft, yet holds its shape long enough for you to pop them in your mouth… where they then melt in your mouth.The recipe for the sugar free homemade condensed milk is below in notes. Ingredients
- 1 cup cashews, or peanuts or a mix, chopped, roasted if preferred for more flavour
- 1 cup almond meal (ground almonds)
- 1 cup white chocolate chips
- 1 cup condensed milk - store bought or homemade sugar free recipe below in notes.
- 1/2 teaspoon vanilla extract
- 1/2 cup chopped nuts to sprinkle on top
Instructions
- If you are going to make your own sugar free homemade condensed milk, make this first and store in fridge so its ready when you are going to make the fudge. Recipe below in notes.You can make this fudge in a candy mold or you can use any dish or pan. Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.Melt the ingredients. In a medium-large saucepan, combine chocolate chips and condensed milk and on the stove top over a low heat gently melt stirring frequently. Once melted and the mixture is completely smooth, stir in the almond meal, chopped nuts and vanilla extract.Scoop mixture out into the lined baking pan or candy molds and smooth out with a spatula or back of a spoon. Sprinkle with chopped nuts and place in the fridge for 2-4 hours until set.Slice into 1” cubes or any size squares.To store: These fudgy squares should be stored in the refrigerator, covered and will keep well for up to 4 weeks.To freeze: Place leftovers in a zip lock bag and store it in the freezer for up to 6 months.
