Cashew Coconut Protein Balls
Ingredients
- 1 cup almond flour
- 1/2 cup cashew butter (or coconut butter)
- 1/2 cup vanilla or unflavoured protein powder
- 1/4 cup coconut flour
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 2-3 tablespoons milk of choice, if needed
- Pinch of sea salt
Chocolate Drizzle
- 3/4 cup dark chocolate chips
- 1 tablespoon coconut oil
Optional Toppings
- Shredded coconut
- Chopped roasted cashews
- Flaky sea salt
Instructions
- In a mixing bowl, combine the cashew butter, maple syrup and vanilla extract until smooth.Add the almond flour, coconut flour, protein powder and sea salt.Mix until a soft dough forms. If the mixture is too dry, add the milk one tablespoon at a time until it holds together.Roll into 16–18 evenly sized balls.Place on a baking paper-lined tray and refrigerate for 30 minutes.
Chocolate Drizzle
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Drizzle the protein balls with the melted chocolate.Sprinkle with shredded coconut or chopped cashews if desired.Return to the fridge for 10–15 minutes until the chocolate has set.Store in fridge for up to 1 week or freezer for up to 3 months.
