Ingredients

  • 1 cup soft dates, (if your dates are hard, soak in warm water for 10 minutes and drain)
  • 1 cup raw almonds
  • 1/3 cup vanilla or chocolate protein powder
  • 2 tablespoons cacao powder or cocoa powder
  • 2 tablespoons almond butter
  • 1 tablespoon hemp or chia seeds
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Optional Coatings

  • Cacao or cocoa powder
  • Finely chopped almonds
  • Shredded coconut
  • Hemp seeds

Instructions

  • Add the almonds to a food processor and process until roughly chopped.
    Add dates, protein powder, cacao powder, almond butter, hemp seeds, coconut oil, vanilla and sea salt.
    Blend until the mixture comes together into a sticky dough.
    If the mixture seems too dry, add one teaspoon of water at a time until it holds together.
    Roll into 14-16 bite-sized balls using your hands.
    Roll in your favourite coating if desired.
    Refrigerate for at least 30 minutes before serving.
    Store in an airtight container in the refrigerator for up to one week or freeze for up to three months.
