Ingredients
1cupalmond flour
1/2cupcashew butter (or coconut butter)
1/2cupvanilla or unflavoured protein powder
1/4cupcoconut flour
1/4cupmaple syrup or honey
1teaspoonvanilla extract
2-3tablespoonsmilk of choice, if needed
Pinch of sea salt
Chocolate Drizzle
3/4cupdark chocolate chips
1tablespooncoconut oil
Optional Toppings
Shredded coconut
Chopped roasted cashews
Flaky sea salt
Instructions
In a mixing bowl, combine the cashew butter, maple syrup and vanilla extract until smooth.Add the almond flour, coconut flour, protein powder and sea salt.Mix until a soft dough forms. If the mixture is too dry, add the milk one tablespoon at a time until it holds together.Roll into 16–18 evenly sized balls.Place on a baking paper-lined tray and refrigerate for 30 minutes.
Chocolate Drizzle
Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Drizzle the protein balls with the melted chocolate.Sprinkle with shredded coconut or chopped cashews if desired.Return to the fridge for 10–15 minutes until the chocolate has set.Store in fridge for up to 1 week or freezer for up to 3 months.
