Apricot Orange Protein Balls
Ingredients
- 1 1/2 cups dried apricots
- 1 cup rolled oats
- 1/2 cup vanilla protein powder
- 1/3 cup almond butter or cashew butter
- 2 tablespoons fresh orange juice
- 2 teaspoons finely grated orange zest
- 1/4 cup mini dark chocolate chips
- 1 teaspoon vanilla extract
- Pinch of sea salt
Optional Coatings
- Shredded coconut
- Finely chopped almonds
- Extra orange zest
Instructions
- Add the dried apricots and oats to a food processor and pulse until roughly chopped.Add the protein powder, nut butter, orange juice, orange zest, vanilla and sea salt.Process until the mixture begins to come together into a sticky dough.Fold or pulse in the chocolate chips just until evenly distributed.If the mixture feels too dry, add an extra teaspoon of orange juice. If it is too sticky, add a little more oats.Roll into approximately 12–16 bite-sized balls.Roll in shredded coconut or chopped almonds if desired.Refrigerate for at least 30 minutes to firm up before serving.Store up to 1 week in the fridge or freezer for up to 3 months.
