Birthday Cake Frozen Yogurt Protein Bites
Ingredients
Yogurt Bites
- 1 cup thick Greek-style yogurt, plain or vanilla
- 3 tablespoons cashew (or any other nut or seed) butter
- 2-3 tablespoons honey or maple syrup (taste test)
- 2 scoops protein or collagen peptides powder
- 1 teaspoon vanilla extract
- 1/4 cup rainbow sprinkles
Chocolate Coating
- 3/4 cup white chocolate chips
- 2 teaspoons coconut oil
- 1/4 cup rainbow sprinkles
Instructions
- Line a 12-hole muffin pan with parchment paper liners or use a silicon muffin pan or even an ice cube tray.Mix together the yogurt bites mixture by combining all of the ingredients in a medium bowl. Whisk together until smooth, thick, and creamy. Taste the mixture and adjust as needed.Divide it amongst your muffin cups, filling each muffin hole about 2/3 way full.
Chocolate Topping
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted, add a teaspoon of chocolate to the top of each bite, filling that last 1/3 of each crevice. Sprinkle sprinkles over the top.Freeze! You will want to freeze the bites for 3-4hours before removing them from the molds. Store in an air-tight container in the freezer for up to 3 months. Let the bites thaw a few minutes before enjoying for the creamiest texture.
